Update:

If I change the language in calibre using the welcome wizard then I get the following:

English (United Kingdom) == Shop
English == Store
English (Australia) == Store

So guess this is a calibre issue not a KU issue.
Yes, it is an issue with how the translations are done. Any string marked as translatable in a plugin will get the word first from the plugins translation files and then from the calibre translation file. If the plugin doesn't have a translation for a language, then it gets whatever is in the calibre translation. I've tested other languages, but, I don't think I've tried the other versions of English, so I hadn't noticed this.

The fix would be to add an en_GB translation just for this.
