What the OP has probably forgotten to mention is sleep. One of the recent firmware changed things so that the charging level did not update if the device was sleeping. When you woke it, the update happened. And as unplugging the device wakes it, the charging level will get updated as well.

Another firmware version changed this again so that the charge level can be updated while sleeping. But, I don't think it is a constant update, so it might jump several percent rather than going up by one. I don't know exactly how it works at the moment because I just connect it to the PC when updating and that usually is enough charge until the next time. Or I plug it in and forget about it for a while.
