Historically mono CRTs did dark mode because focus was better. So many terminal applications on GUI systems kept it out of tradition.
Modern Dark Mode wasn't to read in the dark but to save power on OLED phones.
I only read with a small angle-poise lamp at night. I tried dark mode with and without front light. I think it's a personal preference and people used to white text on black may prefer it, but personally I was delighted in early 1990s to forget DOS & CP/M. I think also some people use laptops & monitors in areas with too high ambient light or with Contrast & Brightness too high (typically defaults). My Contrast is 18 & brightness 26 (out of 100) on monitor and Laptop Brightess setting at less 1/3rd, so the white page isn't too bright.
I'm used to reading books on paper with black text, so I imagine that's why I like the black text on eink. I've loads of old books with yellowed or faded paper and if the light is bright enough for them I don't need the eink front light.
