You can use any column you want to create the collection, though some might not make sense (such as title or modified). Some people find "tags" to be useful, but, I don't as I would end up with to many collections to be useful.
Unfortunately, creating a new column does change the modified date. It's something I don't agree with, but, is designed into calibre. I always run from source, so have blocked the update.
An alternative to relying on the modified date might be to either tag books as "need editing" or use the Reading List plugin. This can group books in different ways including lists that can be sent automatically to a device when is is connected.
