Click on the TTS icon in your toolbar once you're inside your book, up pops the dialogue box. You know it's got your "TTS Options" at the bottom you then click "Start TTS". Anyway to the right of "Divide Content by" (usually set to full stop as default) select the gear icon. That should take you to the TTS settings of your device itself.
I can then choose "Preferred engine" (Choose between Samsung or Google's on my Samsung devices, or on my Onyx, just Google's). Engine selected I then can tap the settings gear icon next to the preferred engine then I can access my different voice data I already have installed, or install voices if I've not yet got any installed.
I know there are people here who use other third party TTS apps they can install that they like better maybe search the forum. For me, I find Samsung or Google fine. I like to swap between English and Australian English.
If that isn't how it works for you on Nook you might have to go ask the Nook people.
P.S. You can also access the same gear icon to launch your device TTS options in "Miscellaneous" settings too from the menu in the top right corner of the 3 dot menu that you can see when you tap in the middle of the book page but either way you still need a book open access it. I do wish they put their settings/control options etc. device wide on your home shelf and not bury most settings inside of open books.
