The calibre defaults work pretty well for converting MOBI to EPUB. I recommend changing the output profile to Tablet in order to keep images at their original resolution.
I suggest that you consider whether or not this is necessary. The change to no longer accept MOBI only applies to emailing and using the send-to-kindle apps. You will still be able to sideload MOBI files via USB either manually or using calibre. Also the change won't happen until August. You have until then to email any MOBI files that you want on your Amazon account. Once there they will not go away according to Amazon.
