When I needed something similar a few months ago I used PageEdit, a companion product to Sigil ==>>

It's a WYSISWYG editor for epubs. IMO the easiest way to use it is via Sigil's Book Browser->Open With on the opf file - The following shows copying text from the EPUB to Notepad++. Select text with Shift, Ctrl and arrow keys - Ctrl+C to copy, paste wherever with Ctrl+V.
Works the other way too, i.e. copying text from elsewhere into the EPUB, if you're doing this I suggest you
don't use Dark mode in PageEdit, there's a setting in its Preferences.
