I’ve also had this happen when I have the Kindle in my ‘utility vest’ pocket: there are magnet closures on the exterior pockets to keep stuff from falling out, and they’re in proximity to the Kindle when it is in the interior pocket.
I’m not sure even having a cover solves the issue, as there can still be other magnets around to trigger the sensor.
But it is pretty rare for it to happen and once you figure out how to restart it, a minor annoyance at most.

If I remember correctly, Kobo has a setting where you can disable the sleep cover sensor/function.
And good thing I didn't order that Kindle sleeve with the magnet to lock the flap
