You can also add new books by opening the collection you want to add it to and tapping the +/- icon. New books will be near the top if Sort order is Recent.
But it is probably simplest to just turn off the Collection filter while you are adding the new books.
I could probably do entirely without collections, but do use Started (books I’m currently reading) and Next (books I want to read Next). After some experimentation I finally settled on not showing them in Library and mostly just stay in my Started collection (Collections view option), reading those books until it is time to start a new one. It helps me focus on books I’m trying to finish instead of the shiny new books I just bought.
However this doesn’t work as well with iOS Kindle app, which usually will not open the app to the collection in subsequent sessions. There is however a widget that takes you directly to most recent book, bypassing Home or Library, so I’ve just been using that.
At this point, Amazon is unlikely to re-vamp how collections work. I think it is likely they’ll add Author grouping, and it would be nice if you could filter by genre.
