Only about 70 dpi to 150 dpi is needed for signage. But I don't see anything about pixel density or resolution or response time (speed irrelevant for posters).

They'd need clear liquid and C, Y or M balls that are to sides for clear, then front and/or back for colour.
The regular eink uses a milky liquid and you see an negative image on the rear as the white & balk balls swap. Early eink had only black balls.
In theory layered C Y M is more than 6x brighter than than R G B. 19th C colour slides used R G B starch dots and were very dim compared to later C Y M layered coloured negatives and the cunning colour reversed slides.
