Unlike other books I have recently purchased from Kobo these do not have a download option but I can read them on my kobo desktop app.

I am not exactly sure where on my computer these file are stored. I thnik that I have located them in a file 'Kobo Desktop Edition>kepub' but they just strings not an actual epub file.

Is there anyway that I can convert and place these books to be managed by calibre?

I have noticed that there is a KoboUtilities Plugin available but I have not installed it as of yet as I have just began the kobo experience.

You can't. Firstly, they will have DRM. As has already been stated detailed help with DRM removal is not allowed here.

Secondly, you do not own these books, so removing DRM from them is problematic. Kobo Plus is a subscription service and the authors are paid based on you actually reading the book. That means they have to be read inside the Kobo applications/devices for this to be reported correctly. As a rule, help with removing DRM from libraries and other subscription services is frowned upon.

If you want to track that you have read the book in calibre, you can add the book as an empty book. This will have the details of the book without a format. When you connect the device, you will be able to see the book listed and matched to the book in the library. And use various functions such as the collection management built into the drivers, or many of the functions in the Kobo Utilities plugin.
