FWIW the templates in Save to Disk and Send to Device affect file names, not metadata. (which is why templates in that location had no effect)
Many devices now have 'book on shelf management ' rather than a simple folder based file system the my old EZReader did.
The Plugboard allows standard (leaves standard field usage intact) Calibre data to be merged into the desired Reader fields as it is transferred to the reader.
Since every manufacture does their own thing, you have the ability to set 'do this for device X' only' (if you only have a singe brand, then All is fine
