My eReaders pop up to what I was reading when I shut the cover. Maybe it's as simple as opening the non-fiction book you want to read next reading session before closing your cover.

That said, if you don't like the non-fiction books you're trying to read, maybe you should find something else that grabs your interest. (As others have mentioned.)
