I have the sleep cover folded so that the device is propped up. I am wondering if this is some sort of magnet issue? I disabled the auto-sleep cover setting and haven't had the issue since, so far.
Any suggestions? Should I try to replace the cover itself?

Most probably magnet issue. I use mine without a case and i have not experienced what you described. Not even once.
One of the reasons i do not use magnetic cases is because i wear an automatic watch everyday. Magnets re enemies of automatic movements. Instead i use a pouch/sleeve with thick foam padding and very soft furry inside lining.
