Metadata fields changed behavior

A couple of questions; Calibre 5.33.2 on Windows 10:

1: In the Yes/No/Undefined metadata fields (e.g. 'Read", plus some other columns I've added) the default state on a newly imported epub used to be 'Undefined', i.e. blank. Now all imports are getting "No" as the default.
Is this something I've accidentally done, or just the new way things are? (I prefer Undefined over No, as the big red Xs are ugly)

2: I used to be able to edit a metadata field by clicking on it then pressing F2 and using cursor keys to select Y/N/U, but F2 doesn't do anything now so I have to double-click then select using the mouse. Again, is this me or just the new way?

Thanks!

(Bonus question: using the command line simply opens Calibre, and the actual command is ignored, e.g. "calibre ebook-meta" only starts Calibre. Is this my error?)
