For me it's a compromise between the screen area and the ergonomics (i.e. I must feel comfortable holding my reader in one hand and not tire too quickly). A 8-incher is at the upper limit, any larger and it would be too big and heavy. Smaller than 7'' would have too small a screen. 7-8'' is the golden mean.
