iOS / iPadOS 14.8.1 has been released
For those wishing to stay at iOS / iPadOS 14.x, Apple has released iOS / iPadOS 14.8.1.

ETA: I have installed iPadOS 14.8.1 on my iPad Air 2020 and everything seems okay so far. I’ll install it on the iPad mini 5 tomorrow.
