Thank you @Uschiekid for the information. I appreciate you helping me out. I did find their privacy policy that details a lot of the information they collect so the no-wifi option with updates from here is probably the way I would go.

I also just spent more time poking through the forums and found that there is an active group working on alternative OS for Kobo devices which looks promising.
