That means the book creator has embedded a monospaced font. Which is good. You can also sideload a monospaced font for books that specify one, but, don't embed it. The instructions are here somewhere and a search should find it.

When you change the font settings, they are saved for that book and saved as the defaults for future books or books that don't have their own settings.
