I would rather not add a conversion option for a case that applies to a small minority of users. If you can tell me a specific set of unsupported languages that you need to convert and what supported language you want to have used instead I will add code to the plugin to make that substitution happen.

As far as I can tell the language setting in Doitsu's plugin sets the language used for the conversion report. It does not change the language of the book being converted.
