Dark Mode is a replacement for Invert Screen. It is only active when a book is opened, and does not invert images. But, it is only officially supported on the Elipsa. It will not be officially supported in the older devices as it needs a new waveform to work properly. Whether it will be supported on future devices is unknown. But it is in the firmware version 4.28.x and can be turned on on the other devices with an option in the config file. How well it works, especially compared to Invert Screen, I don't know as it don't use them.
The Invert Screen settings are still there. The option is still on the Developers options screen, but, it doesn't take immediate affect. It seems to take affect when the device is restarted.
I have no idea what happens when both the Dark Mode and Invert Screen are enabled.
