You should not be converting to Mobi. You should be converting to KF8 (AW3). Also, you do need to keep the cover and OPF. Also, you should keep the original ePub.

Calibre uses the to display the cover. Also the OPF files are used to help recreate the database if it ever becomes corrupted. And as ePub is the source format, then you should keep the format you paid for.
