This has not happened before and I'd like to know if there's a way for me to be able to open ebook without starting calibre and adding said ebook into the database, like an independent ebook reader. I saw a post sometime back with a similar issue but the solution was for mac, so I'd like to know if there's a way to fix it for windows.

I have checked preferences of book calibre and the ebook reader and not found anything that made adding and force opening calibre a thing for the ebook viewer.
THIS IS AN OS issue.
You need to set the properties for the Filetype (EPUB?), open with, to the (Calibre2)/e-book-viewer.exe
