Some of my favourites have been menitoned already -- I really recommend Butler's "Kindred" and Willis' "Doomsday Book".
Tristan Palmgren "Quietus" is about an academic time traveller on a research trip to Europe during the Black Death, and a local monk. Its focus is more towards emotions and philosophy than engineering and warfare, so it may not be what you're looking for.
