Out of the box, unless you save as a Word 97-2003 document (.doc), Word 2007 will save your file as a docx.
You may have modified your preferences to default to save as .doc. To fix that, in Word Options, click on Save and check the preferred save format is Word document (.docx). Though I seem to remember that Save As still showed Word document (.docx) as an option after that preference was changed.
