The short answer is no. Kobo do no read the tags from the books and there is nowhere to display them. The closest you can do is to create collections from the tags. The collection list can be sorted, but, the lists can be long. And you would need to create a collection for each combination of tags you want to see.

You could do something like put the tags in the subtitle. That allows searching for the tags and they will be visible in the book lists. But, there is no sorting.
