The anthology feature works by basically hijacking the individual book update code to update each included sub book.
A couple times before, I've looked at re-architecting to allow multiple anthology updates; but it's a big lift for a relatively minor convenience.
You can do multiple anthology updates/downloads at once the background if you launch them separately. However, if they are from the same site, you'll be generating parallel traffic and some sites may throttle or block you.
