Not sure about Windows or Linux, but on Mac, the epub version is shown in the title bar, e.g., "Sigil_User_guide_2021.03.15.epub - epub2.0 - Sigil"

Converting epub2 to epub3 is done with KevinH's nifty ePub3-itizer plugin
