How are you maintaining the collection? If you are doing it via calibre, it is likely that whatever triggers the rebuild of that image is not triggered. I would expect that if it gets replaced by another collection, and then brought back later, it will have the updated covers.

If you are using calibre, manually adding and removing a book from the collection might also do it. And using the book in question is more likely to do this.
