Preferences is where you set DEFAULTS.
But, these are only for first time (book conversion) usage.
Calibre conversions remembers the settings that WERE USED (this allows per book adjustments at the beginning and it will repeat using those on later use FOR THAT BOOK.
The is a button (single conversion) or Tick box (multiple) that causes it to forget previous settings and grab the current default.
Note: the viewer has its own preferences (override)
