I know I can keep the existing data for a field by clicking the left pointing arrow. But I've tried to edit the downloaded tags, because it had one or two that I didn't want. It looks like the edit takes in the review screen, but when I click OK the tag I tried to remove is still there.

Is that how it's supposed to be? Do I need to do something else to make it stick?
That probably means the book already has that tag. The downloaded tags are merged with the current tags rather than replacing them completely.

On a related note, is there a way to get the 'review downloaded metadata' screen when on the 'Edit Metadata Individually'? I like that it highlights what has changed. That doesn't seem to happen in the 'Edit Metadata Individually' screen.
In the metadata editor, after downloading metadata, you can right-click in any field and choose undo to if you don't like one field.
