To save the metadata that you have changed within Calibre into the actual, physical book format (e.g. epub) copy of the Calibre metadata, you must manually do so via "Embed Metadata" (add the icon to your ToolBar in Preferences), or let it automatically be done when your book is "saved to disk" or "saved to device".
