I am not seeing this on macOS? Which is strange. I opened the content.opf of a new empty epub and added the following:

<dc:creator>you &amp; me</dc:creator>

Then made the opf change by adding a couple of blank xhtml pages via BookBrowser and then deleting a few of them at random.

At the end I re-opened the content.opf and see the following:

<dc:creator>me &amp; you</dc:creator>

So I do not see any numeric entities added for for an & (& is the numeric entity for an &).

So how exactly am I supposed to change the content.opf that will illustrate the problem?
