I think there's some discussion about renaming certain files/executables to prevent updates. That said, disabling wifi is the most effective and foolproof method.

SKIP_UPDATE_CHECK still works for 5.11.x (KUAL Helper+ can create this).

Last I checked though, Kindle Collections + Librarian Sync is broken on 5.12 so you definitely don't want to go higher than 5.11.
Thanks for the correction on registration.

But renaming files can't be done unless the kindle is already jailbroken.
