On the Kindle you "Deregister." And when you click "Deregister" you get a confirmation that reads... "Deregister Your Kindle .... Your Kindle will be deregistered from your Amazon account, some features will not work, and some settings may not be saved. After deregistering, you can register your Kindle to another Amazon account. ... Are you sure you want to deregister? ... CANCEL ... DEREGISTER"

On a Nook you don't "sign out, you "Erase & Deregister Device." I don't know if the Nook has a confirmation screen. I'm away from home and don't want to take the chance. But the language makes it pretty clear what will happen if you follow through.
