Because the on line converter doesn't handle metadata, or, doesn't understand that the namefile should be treated like a metadata.
The best solutions is to use calibre to convert Your book, where You can change the title, the Author ecc before sideloading Your book to a Kindle. You could also insert the mobi file created elsewhere in calibre, handle metadata and sideload it to the Kindle.
