One possible solution for this without scripting:

export you data to csv using calibre catalogue feature.
add the pubdates in a spreadsheet. (You can google how to increment by month using excel).
save the spreadsheet as csv.
update book metadata in calibre by re-importing the csv using the Import List plugin.
