How I would do it: DO NOT USE THE OS TO DELETE OR MOVE BETWEEN FOLDERS.
1) on Book 2 in Calibre: Tap 'O' (open file location); (Leave Explorer open)
2) Now on Book1 in Calibre; open the Metadata editor ('MDE'): Drag the format from explorer into the formats section (this is NOT an OS move) ; OK
3) Back to book 2: Open the MDE, select the format: delete (the recycle icon);OK
This way Calibre maintains the correct data
