Are you talking about using them on tablets, phones, and laptops as well as a Kindle? In that case I'd go with EPUB. There could be some formatting that's in an AZW3 that gets lost when it's converted to MOBI since it uses a rather old version of HTML. But the formatting won't get lost when an AZW3 is converted to EPUB. But then you'd need whatever format it was in when you got the book from Amazon, for your Kindle, and EPUB for the other things.
Or, you can avoid that mess and get a Kobo, or something else that uses EPUB. I started with a Kindle but decided to try the Kobo and its user interface is far superior to the Kindle's. But I still buy all of my books from Amazon and do like you do, load them into Calibre where the DRM is removed, then convert them to EPUB then load them onto my Kobo.
