There are a lot of lines that start with "adept:" in the two .xml files, so I'm guessing one or both of these would be the ones copied (maybe all three files?).
The device.xml is tied to the device and shouldn't be worried about. The activation.xml is the file that is created when your device is authorized with Adobe/ADE. That's the one I copy and restore on my ereaders so I don't have to keep using up my authorizations by reauthorizing.
