KindleUnpack is what I use to access the images ... I get 3 folders and use the images found in the mobil8 folder. If the images contain the text, it is easy to create a cbr from them ... but not so easy to create a pdf book if the images are different sizes. (NOTE: After asking if there was a way to bulk scale these images I searched for a software to do that and discovered a free site that I just used successfully to resize all at once [bulkresizephotos.com]. It worked perfectly.)
But back to your instructions ... I did a search while in preferences for the epubcheck plugin and had no luck ... so I am unable to do that step. Can you provide a link to the epubcheck plugin download so that I can try it?
I used KindleUpnpack to create an epub and it is equally unusable, at least so far.
In Calibre's editor, I selected "Fix all HTML files" , "Remove unused CSS rules" and "Check Book", the latter of which detected errors that could not be fixed automatically:
