My guess is that few people are reading technical books with charts and graphs and tables on a 6” screen, color or no color: it is too small. So the ‘color is for data’ argument seems weak to me.

But with color, things people are reading on 6” screens will be enhanced: cover images will be in color, graphic novels are in color, photographs and illustrations can be in color (never mind that if the print book had no color for its photos and illustrations, probably the ebook won’t, either, even though it doesn’t cost more). And of course storefront will be in color. Arguably even if the color isn’t great, it is still a better experience than greyscale, provided it doesn’t involve compromise with the clarity of text.
