To play devil's advocate, I find that I enjoy reading ebooks on my old Sony Clie PDA (also 480x320) more than on my iPod Touch. The key for me is its scroll wheel, which is much more comfortable for one-handed reading -- I'm not a fan of tapping or swiping the screen to turn pages. Plus, the battery life is significantly better than on the Touch.
