I would like to have title only displayed with the series/number below it as shown in this example: https://www.mobileread.com/forums/at...5&d=1584100236

How/what do I need to edit in order to achieve the same result as above? Would the metadata plugboard be the place to start?

Thank you in advance.
The series information in the book title is coming from adding the series to the book title in calibre. You'll have to modify your plugboard to remove the series information. Check in the Metadata plugboards section of calibre's preferences.

The second image is Kobo's native series display which suggests the Set series information check box on the KoboTouch/KTE driver's Metadata on device & advanced is checked. That does require books to be sent to the device, safely eject, import, re-connect and then the metadata will update if you have metadata management set to automatic (preferences/sending books to devices).

Edit: you can very likely just delete the plugboard instead of editing it.
