Going to the dictionaries listing in the "Language and Dictionaries" area only seems to allow choosing a active dictionary with no dictionary removal option available that I can find. Nothing in the manuals either it seems. Current Kindle manuals have minimal content compared to the ones for older devices.
Do a search from your Kindle on the word "dictionary" and choose to show all. Find the one you want to remove, and long press. You should then get the option to "Remove From Device" (at least that's how it worked for me)
