Jumping in here.

I thoroughly enjoyed Hubbard's Battlefield Earth. I also enjoyed his Final Blackout (not a chunky book, but a standalone). I read his Mission Earth series though and disliked it, a lot.
So maybe try Battlefield Earth and leave it at that?

As for Fantasy, Brandon Sanderson has his 10th Anniversary eidition for his Elantris. I read the original back in '06 and really enjoyed it. He added a bunch to the 10th Anniversary Edition, not sure how much though.
