Part of that depends on when you installed calibre. I don't know what the current default toolbar is, but, both the Polish books and Embed metadata have been added since I first installed calibre. When you update calibre, it should not make any changes to your current configuration. Unfortunately, unless you read the release notes carefully, it is easy to miss added functions like this.
