You could revert to an earlier version, there's a link on the calibre - Download for macOS page, just below the Donate button.

I had a similar problem on Windows a few years ago, the solution was to run a 'calibre-debug --default-programs unregister' command and set the CALIBRE_NO_DEFAULT_PROGRAMS environment variable - but I am pretty sure that is/was a Windows Only solution.
