The main settings are stored in settings.reader.lua, if you created it there's also defaults.persistent.lua, and besides that there are the various subdirectories like data, fonts, settings, styletweaks, maybe others. Unless you're short on space I'd just copy the whole thing, maybe without libs which is the bulk of the size.
