The Amber series and "Lord of Light" are likely to be at the top of most suggestion lists but I'm gonna suggest a different path: short stories. Zelazny was a fine novelist but his I always felt his short stories were so much better than his longer works. "The Magic" is a recently published collection and I think a great place to start if you don't have access to the massive NESFA Press collection I previously linked.
